📝 Ingredients

  • 3–4 boneless, skinless chicken breasts

  • 2 cups sliced baby potatoes

  • 1 red or purple onion, sliced

  • 1 cup baby carrots

  • 1 can pineapple slices (in juice, not syrup)

  • 2 tsp minced garlic

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp Italian seasoning

  • 1 packet Hidden Valley Ranch seasoning

  • 1 cup low-sodium chicken stock

👩‍🍳 Directions

🍽 Step 1: Prep Your Ingredients

  • Wash and slice the potatoes.

  • Slice the red/purple onion and pineapple (or use canned slices).

  • Wash the chicken breasts, and make 2–3 shallow cuts across the top of each.

  • Stuff each cut with a bit of minced garlic to infuse flavor.

🍽 Step 2: Layer the Base

  • In a round or rectangular oven-safe pan, start layering:

    1. A bed of sliced potatoes

    2. A layer of red onions

    3. A layer of pineapple slices

  • Repeat this layering once more for even distribution.

🍽 Step 3: Add the Chicken

  • Place the prepared chicken breasts on top of the layers.

  • Sprinkle Italian seasoning and Hidden Valley Ranch seasoning on the chicken.

  • Pour ½ cup chicken stock into the pan to keep everything juicy.

🍽 Step 4: Roast the Veggies

  • In a second baking dish, add:

    • Sliced potatoes

    • Baby carrots

    • Red onions

    • Pineapple chunks

  • Drizzle with olive oil, season with Italian herbs, and pour in the remaining ½ cup chicken stock.

  • Cover this dish with foil.

🍽 Step 5: Bake

  • Preheat oven to 400°F.

  • Bake both pans:

    • Chicken pan uncovered

    • Veggie pan covered

  • Bake for 1 hour, or until chicken is golden and cooked through, and vegetables are tender.
