Made with just a few simple ingredients like sweet Italian chicken sausage with kale, fresh tomatoes, and protein-rich kidney beans, it’s a no-fuss, low-carb-friendly meal that’s packed with nutrition.

🛒 Ingredients

1 pack sweet Italian chicken sausage with kale

1 beefsteak tomato

1 bag jasmine rice (microwaveable)

1 tablespoon minced garlic

1 can kidney beans (drained)

¼ stick unsalted butter

Onion powder, to taste

Italian seasoning, to taste

Chives, to taste

½ cup water
🔥 Step-by-Step Instructions
1. Cook the Sausage and Tomatoes

In a frying pan over high heat, add 1 tablespoon of minced garlic and ½ cup of water.

Poke small holes in the sausages on each side to help them cook evenly.

Add the sausages to the pan and cook over high heat.

While they’re cooking, dice your beefsteak tomato into small cubes.

After a few minutes, add the diced tomatoes to the frying pan with the sausage.

Let everything cook together until the sausages are fully done and the tomatoes are soft and bursting with flavor.
2. Prep the Rice and Beans

While the sausage is cooking, microwave the jasmine rice (follow the 90-second instructions on the bag).

Once done, place the hot rice in a bowl and mix in ¼ stick of unsalted butter.

Open and drain your can of kidney beans, then add them to the rice.

Sprinkle in your onion powder, Italian seasoning, and chives to your liking. Mix everything together well.
3. Plate and Serve

Once the sausage and tomato mixture is cooked through, remove from heat and let it rest for a minute.

Slice or serve whole sausages over your rice and bean mix.
