Losing 250 pounds with the support of LifeRx.md has taught me that eating healthy doesn’t mean sacrificing comfort or flavor. In fact, it’s about making smart, nourishing choices that feel just as satisfying as your favorite comfort food — like this High-Protein Mexican Lasagna Bake.
This is one of my all-time favorite meals. It’s loaded with lean protein from turkey sausage, three kinds of beans, colorful bell peppers, and layers of flavor tucked between spinach and herb wraps. Topped with a little cheese and fresh cilantro, it bakes into a savory, comforting dish that’s perfect for meal prep or a family dinner.

🌯 Ingredients

3 lbs sweet Italian turkey sausage

2 tbsp avocado oil

1 tbsp minced garlic

2 tbsp chopped fresh parsley

2 tbsp chopped fresh cilantro

1 pack spinach and herb wraps

2 cans refried beans
-
1 can black beans (drained)
-
1 can kidney beans (drained)

1 can northern beans (drained)

1 can diced tomatoes
-
1 cup Mexican-style sweet corn rice (cooked)

4 bell peppers – 1 each of green, red, yellow, and orange (diced)

1 small yellow onion (chopped)

1 cup shredded cheese (optional, for topping)
🔪 Step-by-Step Instructions
1. Prep the Veggies
Slice and dice the bell peppers, onion, and garlic. Add in the can of diced tomatoes, parsley, and avocado oil. Toss everything together and let it sit for 10–15 minutes to marinate.
2. Cook the Sausage


Brown the sweet Italian turkey sausage in a large skillet. Once cooked, drain any excess fat and set aside.
3. Sauté the Veggies
In the same skillet, cook the marinated vegetables until just softened and fragrant. Set aside once done.
4. Drain the Beans
Rinse and drain the black, kidney, and northern beans using a strainer.
5. Build the First Layer


Line a large baking pan with the spinach and herb wraps. Spread a generous layer of refried beans over the wraps.
6. Add the Filling
Mix the cooked turkey sausage with the drained beans and layer this mixture over the refried beans. Next, add a layer of Mexican rice, followed by a layer of the sautéed veggies. Sprinkle cheese on top (if using).
7. Repeat & Finish
Repeat the layers — wraps, refried beans, sausage-bean mixture, rice, veggies. Top it all off with cheese and a sprinkle of fresh cilantro.
8. Bake
Preheat your oven to 375°F (190°C) and bake uncovered for 50 minutes. Let it cool slightly before slicing and serving.
