Ingredients:
- Boneless chicken breasts
- 1 zucchini
- 2 sweet potatoes
- Fresh chives
- 2 cloves minced garlic
- 1 tablespoon grated ginger
- Lemon pepper seasoning
- ½ white onion
- 1 can of black beans
- Fresh parsley
- Italian seasoning
- Extra virgin olive oil (EVOO)
- Avocado oil spray
- Hidden Valley ranch seasoning (optional)
Instructions:
Step 1: Prep the Vegetables
Start by washing all the vegetables thoroughly. Slice the zucchini into rounds, and peel and slice the sweet potatoes into thin rounds or wedges. Spray the sweet potatoes with avocado oil and rub it in to ensure even coverage. Sprinkle parsley, Italian seasoning, and a little Hidden Valley ranch seasoning over the potatoes for an extra burst of flavor.
Slice the onion and chives as well, and set them aside for later.
Step 2: Prep the Chicken
Pat the chicken breasts dry with a paper towel to remove any moisture. Drizzle extra virgin olive oil on both sides of the chicken breasts and rub it in thoroughly. Season one side with lemon pepper seasoning, and the other side with parsley, Italian seasoning, and a bit of cilantro (if desired). Once seasoned, let the chicken sit for a few minutes while you move on to the next step.
Step 3: Air Fry the Chicken & Sweet Potatoes
Preheat your air fryer to 375°F (190°C). Place the chicken breasts and sweet potato slices on the air fryer rack. Cook for 35 minutes, checking halfway through to ensure everything is cooking evenly. The sweet potatoes should be crispy and tender, and the chicken should reach an internal temperature of 165°F (74°C).
Step 4: Cook the Vegetables
In a large frying pan, heat some extra virgin olive oil over medium-high heat. Add the sliced zucchini, onion, and chives to the pan. Add the minced garlic and grated ginger, along with a pinch of Italian seasoning and a sprinkle of Hidden Valley ranch seasoning. Stir everything together, making sure the veggies are well coated in oil and seasonings.
Add ¼ cup of water to the pan to help the veggies cook evenly. Stir occasionally to prevent burning, and when the vegetables begin to soften, reduce the heat to medium-low. Cover the pan to let the veggies marinate and cook through.
Step 5: Add the Black Beans
After about 10 minutes, add the black beans to the vegetable mixture. Stir them in and let the beans heat through for a couple of minutes. Cover the pan and let everything simmer on low heat until the chicken and sweet potatoes are done.
Step 6: Check Everything
At the 25-minute mark, check the chicken and sweet potatoes. The chicken should be golden and fully cooked, while the sweet potatoes should be tender and crispy. If the chicken is done but the sweet potatoes need a few more minutes, simply remove the chicken and let the potatoes finish cooking for a couple of minutes.
Step 7: Plate the Meal
Once everything is done, remove the chicken and sweet potatoes from the air fryer. Plate the chicken alongside the veggies, and spoon the black beans and vegetables over the chicken for a colorful and flavorful presentation.
Step 8: Serve and Enjoy!
