Sweet Italian turkey sausage, sliced

1 green bell pepper, diced

1 red bell pepper, diced

1 can black beans, drained and rinsed

2 cups fresh spinach

2 cloves garlic, minced

Fresh ginger root, grated (to taste)

1 can diced tomatoes

1 small purple onion, diced

2 green onions, sliced

Italian seasoning, to taste

1 packet cauliflower rice (or 2 cups prepared)

1–2 cups beef stock (low sodium recommended)

👩🍳 Step-by-Step Instructions
1. Prep the Vegetables
Wash all vegetables thoroughly. Dice the bell peppers, purple onion, and green onions. Mince the garlic and grate the ginger. Rinse and drain the black beans.
2. Cook the Turkey Sausage
In a large pot or deep skillet, lightly spray or drizzle extra-virgin olive oil.
Add the sliced sweet Italian turkey sausage along with minced garlic, ginger, Italian seasoning, and parsley.
Cook over medium heat until the sausage is fully cooked and lightly browned.
3. Add the Veggies & Simmer

Add the diced peppers, onions, black beans, spinach, and diced tomatoes to the pot.
Pour in 1 cup of beef stock, bring the mixture to a gentle boil, then reduce heat and simmer until the vegetables are tender and flavors meld together.
4. Stir in the Cauliflower Rice
Add the cooked cauliflower rice to the stew, stirring occasionally.
Let it simmer gently until the liquid is mostly absorbed and the stew thickens.
5. Rest & Serve
Once finished, turn off the heat and let the stew sit for a few minutes.
Ladle into bowls and enjoy warm—or portion out and freeze for later.
