🛒 Ingredients

  • 2 beef chuck round steaks (about 6–8 oz. each)

  • 1 green bell pepper, sliced

  • ½ purple onion, sliced

  • 1 cup diced beets (fresh or cooked)

  • 1 can seasoned cabbage

  • 1 can mushrooms, sliced

  • 1 packet of cauliflower brown rice

  • ½ stick unsalted butter

  • 3 tablespoons minced garlic (divided)

  • 2 tablespoons extra-virgin olive oil

  • ¼ cup water (for the steak)

  • ½ cup water (for the veggies)

  • Parsley flakes (for garnish)

  • Italian seasoning, to taste

  • Chives, to taste

👩‍🍳 Step-by-Step Instructions

1. Tenderize & Season the Steak

  • Use a meat tenderizer to thoroughly tenderize each steak.

  • Rub both sides with minced garlic and a sprinkle of Italian seasoning.

2. Sear the Steak

  • Heat a frying pan over high heat with 2 tablespoons of olive oil, 1 tablespoon minced garlic, and a pinch of chives.

  • Add ¼ cup of water to help steam-sear the steak and keep it juicy.

  • Sear the steaks on high, flipping every 2–3 minutes for even cooking. Cook until your preferred doneness. Set aside and keep warm.

3. Sauté the Veggies

  • In a second pan, combine mushrooms, bell pepper, diced beets, 2 tablespoons of minced garlic, and a splash of olive oil.

  • Cook over high heat, stirring frequently.

  • Add ½ cup of water and continue to sauté until veggies are tender and fragrant (about 8–10 minutes).

4. Cook the Cauliflower Brown Rice

  • In a saucepan, melt ½ stick unsalted butter over medium heat.

  • Add in the cauliflower brown rice and 1 tablespoon minced garlic.

  • Pour in just enough water to cover the rice, bring to a boil, then reduce heat to low.

  • Cover and simmer for 5 minutes, then fluff with a fork and turn off the heat.

5. Warm the Cabbage

  • Open your can of seasoned cabbage and warm it on the stove or in the microwave while the rice and veggies are finishing.

🍽️ Time to Plate

  • Add a scoop of cauliflower rice to your plate.

  • Top with a generous portion of sautéed veggies and a steak.

  • Add a spoonful of warm cabbage on the side.

  • Sprinkle with parsley for a fresh finish—and enjoy!
