Sunday Night Satisfying Sausage Stuffed Pepper Rings

Packed with protein and healthy fats, these sausage stuffed pepper rings are satisfying and delicious. Ingredients

  • 2 pounds sweet Italian turkey sausage

  • 1 green bell pepper

  • 1 red bell pepper

  • 1 yellow bell pepper

  • 1 orange bell pepper

  • 1 cup mushrooms

  • 1 onion

  • 1 sweet potato

  • 1 regular potato

  • 1 tablespoon minced garlic

  • 1 tablespoon minced ginger

  • Parsley

  • Italian seasoning

  • Thyme

  • Extra virgin olive oil

  • Spray avocado oil

  • 1 can garbanzo beans

  • Low-calorie tomato sauce

  • Cheddar cheese (1/4 cup per pepper ring, depending on brand)

Step-by-Step Instructions

Step 1: Prep Your Veggies

  • Wash all produce thoroughly.

  • Dice onion, mushrooms, sweet potato, and regular potato.

  • Drain the can of garbanzo beans.

  • Slice bell peppers on their side into rings at least 1/4 inch thick. Remove stems and seeds, and set aside.

Step 2: Fry Time!

  • In a frying pan over medium heat, add 2 tablespoons extra virgin olive oil. Once hot, add garlic and minced ginger, cooking until fragrant (about 2 minutes).

  • Add 2 pounds sweet Italian turkey sausage and cook until browned. Remove sausage from pan and set aside.

  • Add diced onion, mushrooms, sweet potato, regular potato, and drained garbanzo beans to the pan with 1 tablespoon extra virgin olive oil. Season with Italian seasoning, parsley, and thyme to taste. Cook until softened and well-mixed.

Step 3: Assemble and Bake

  • Preheat oven to 375°F.

  • Spray a baking dish with avocado oil and place pepper rings in the dish.

  • For each pepper ring, layer cooked sausage, 1 tablespoon low-calorie tomato sauce, and the vegetable mixture. Top with 1/4 cup cheddar cheese.

  • Cover with foil and bake at 375°F for 45 minutes.
